When he finished his apprenticeship, he started to work at Michel Guérard's restaurant and Gaston Lenôtre. Then he has the opportunity to work under legendary chef Roger Vergé as an assistant at Moulin de Mougins.

He entered the "Compagnon du Tour de France" apprenticeship when he was 21 years old, which allowed him to travel the nation while studying various local techniques.
In 1989, in the guide Gault Millau, the late chef was referred to as the "Chef of the Century". He is definitely one of the best chefs of all time. In 1976, he was awarded as France's best worker in cuisine (Meilleur Ouvrier de France).
He has written and published several cookbooks and two among them have been translated into English. He has many restaurants in places like New York City, Tokyo, Taipei, Singapore, Shanghai, Paris, Montreal, Monaco, Macau, London, Hong Kong, Bordeaux, and Bangkok.
In 2016, he earned 32 Michelin Guide stars across all of his famed restaurants, which is the highest number of any restaurateur in history. Joel Robuchon has the most Michelin stars. Sadly, two years later he died after earning 32 stars.
